Fillet Steaks (roughly1 ½ inches thick)

Firstly, remove the steaks from the fridge and let them rest uncovered until they are around room temperature, season the steaks with salt and pepper and dress with vegetable oil.

Add to a very hot pan and cook for the steaks as shown below.

Rare: 3 minutes each side
Medium: 4 ½ minutes each side
Well Done: 6 minutes each side

If you’d like; finish with a cold nob of butter and baste over the steaks.

Let them rest for at least half of the total cooking time for each steak and serve.
