Roast turkey Dinner

For the Stuffing

Method:

Finely dice the onion and chop the sage. Incorporate into the sausage meat and season with salt and pepper. Form into a sausage into greaseproof paper and wrap in tin foil. Cook in pre- heated oven 180 c for 30-40 mins

 

For the Roast Potatoes

Method:

Peel and cut potatoes into roughly 2.5-inch pieces, add to a seasoned pan of boiling water for 14 mins. Remove and ruffle in a colander. To a pre- heated oven 180 c put duck fat into a roasting tray, when piping hot, add ruffled potatoes. Cook for roughly 30-45 mins basting every 10 mins. When ready season with salt.

 

For the Turkey

Method:

Add roughly chopped vegetables and herbs to a roasting tray, and place seasoned turkey onto the vegetables. Cover in tin foil for the first half of the cook, and use the rule of 20 mins per kg +90 mins in an oven at 180 c. Make sure meat is cooked through fully and juices run clear. Leave to rest under tin foil for 30 mins. Retain cooking juices for gravy.

 

For the Gravy

Method:

Method in a heavy based pan, melt the duck fat and stir in the flour to make a roux, and cook out for 3 mins. Slowly add the warm chicken stock, whilst whisking making sure no lumps form. When all the stock is added, bring to a gentle boil stirring often. Add the cooking juices from the turkey, add the browning to desired colour and season to preferred taste.

When all the stock is added, bring to a gentle boil stirring often. Add the cooking juices from the turkey, add the browning to desired colour and season to preferred taste.

 

Serve with preferred choice of vegetables.
